                                                 FALAFEL WITH TZATZIKI

THINGS YOU WILL NEED
  1. 15-oz can chickpeas(drained)
  2. 2-3 sprigs fresh parsley(torn)
  3. 1/2 small onion(chopped)
  4. 1 tsp ground coriander
  5. 1tsp ground cumin
  6. 1 garliv clove(chopped)
  7. 2 tbsp flour+extra for shaping
  8. salt and pepper
  9. 1/4 olive oil

FOR THE TZATZIKI
  1. 1 tsp fresh lemon juice
  2. 1/2 cucumber
  3. 1 tbsp chopped fresh mint(optional)
  4. salt and pepper
  5. 1 garlic clove (crushed,optional)1 cup plain yogurt
                 WHAT TO DO
  1. Put the chickpeas,onion,garlic,cumin,coriander,flour, and parsley into a food processor and blend them together,until they are smooth
  2. Lightly flour the work surface and turn out the mixture. Divide into 12 equal portions and shape each portion into a flat, round patty
  3. Pour the oil into the frying pan and heat.Shallow-fry the falafel for 3-4 minutes on each side,or until golden crisp
  4. Take the cooked falafel out of the frying pan with a slotted metal spatula. Place them on a plate lined with paper towels to drain the excess oil
  5. Deseed and then grate the cucumber. Wrap the cucumber in a clean dish towel and firmly squeeze out any excess moisture into a small bowl.
  6. Mix together the grated cucumber,yogurt,lemon juice,mint,and garlic. Season with salt and pepper and serve tzatziki with the falafel!
