THINGS YOU WILL NEED
- 15-oz can chickpeas(drained)
- 2-3 sprigs fresh parsley(torn)
- 1/2 small onion(chopped)
- 1 tsp ground coriander
- 1tsp ground cumin
- 1 garliv clove(chopped)
- 2 tbsp flour+extra for shaping
- salt and pepper
- 1/4 olive oil
FOR THE TZATZIKI
- 1 tsp fresh lemon juice
- 1/2 cucumber
- 1 tbsp chopped fresh mint(optional)
- salt and pepper
- 1 garlic clove (crushed,optional)1 cup plain yogurt
- Put the chickpeas,onion,garlic,cumin,coriander,flour, and parsley into a food processor and blend them together,until they are smooth
- Lightly flour the work surface and turn out the mixture. Divide into 12 equal portions and shape each portion into a flat, round patty
- Pour the oil into the frying pan and heat.Shallow-fry the falafel for 3-4 minutes on each side,or until golden crisp
- Take the cooked falafel out of the frying pan with a slotted metal spatula. Place them on a plate lined with paper towels to drain the excess oil
- Deseed and then grate the cucumber. Wrap the cucumber in a clean dish towel and firmly squeeze out any excess moisture into a small bowl.
- Mix together the grated cucumber,yogurt,lemon juice,mint,and garlic. Season with salt and pepper and serve tzatziki with the falafel!
